After much persuasion from an old high school friend, I've been convinced to try the "paleo plan". Basically, you're eating all fresh vegetables, meat, fruits...nothing that has been processed. With my health issues (I'm diabetic...booo) I figured this may be a good thing for me to do. I have been doing some research on the health benefits and it sounds great! While I am sure it will be hard for me to resist my sweet, sweet tooth and my guilty pleasure of guacamole chips (yummy!), I am sure I can find some replacements that are just as tasty and healthier. With that said, I found this recipe for roasted veggies on pinterest, and decided to try it out to go with my lean meats for the week. Even if you're not doing the paleo plan, this is still a great recipe especially for summer! Also, please bare with me because I'm still learning about the food plan (read: I may make mistakes), so if you have some suggestions or recipes, I'd love to hear from you! :) Happy Friday everyone!
