Sorry there are no step by step images for this recipe. I prepared this meal with no intention of blogging it, but it was SO delicious I wanted to share it! I'll start with the easy stuff first. For the rice you see here, I used brown rice (from the box) and heated it in the microwave. The salad is just chopped tomato, onion, and avocado with a little spritz of fresh lemon juice, salt and pepper.
Now for the best part!....I bought a pound of fresh salmon from the seafood deli at my local grocery store. I used a little olive oil on it, and then added the lite soy sauce. Next, I sprinkled in a seasoning mix I whipped up which consisted of chilli powder, cayenne pepper, brown sugar, salt, and a little Mrs. Dash lemon pepper seasoning. All seasonings were just measured to my own liking. I baked it in the oven (set at 425 degrees) for about 30-35 minutes. It came out nice and flaky and browned to perfection (so said the boyfriend, and he gives very honest critiques). I was kind of surprised how it turned out, because I just kind of put it all together! Let me know if you try it! :)

The avocado salad looks good. I get pretty stuck doing the same old salads over and over.

ReplyDeleteLiterally just made a freakishly similar meal last night - I stretched my little college budget so I could by myself a protein staple and went with salmon fillets, then the only thingI could think of was a little olive oil and soy sauce. The chili pepper is a nice touch :)
